Food safety is the concept that food will not cause harm to the consumer when prepared and/or eaten according to its intended use. In Australia we rely on food safety standards to protect us from foodborne illness and food poisoning caused by poor handling, contamination, storage and temperature issues. 

The face of Australian agriculture has changed over the past two centuries as farmers have developed resilience and adapted to environmental and economic trends. The challenges have been many and varied: changes to land use and farm management practices in response to climate change, water restrictions, farm debt, financial and health pressures on farmers, reliance on seasonal and migrant workers, as well as variable productivity and international competition. This book examines the current state of the agriculture sector and the environmental and economic outlook. What is the future of farming in Australia?

The Food Industry

What is a closed-loop system? What is involved in stock control rotation? How are computers used in food manufacture? This book examines key areas of food manufacture and distribution. The different techniques of production and quality controls and assurances that ensure a consistent product are explored.Jobs in the industry, systems used, the role of computers in manufacture and the importance of working hygienically are also investigated.

Food Processing

What is the difference between primary and secondary processing? WHat effect does irradiation have? What are 'nature-identical' flavourings? This book examines processes involved in the production of food, on a domestic and industrial scale. The importance of the functional properties of different food types commonly used in food processing, the need for accurate measurements and proportions, and the way that ingredients can be combined are all explained. The equipment used in the processes involved is explored as is the use of additives and flavourings within food processing.

Make It Safe! a Guide to Food Safety

Provides practical guidance on how to control food safety hazards, with a specific focus on controls suitable for small-scale businesses to implement. Outlines the major food safety hazards - microbial, chemical and physical - which must be controlled when manufacturing all types of food products. The control of microbial hazards is given special emphasis as this is the greatest challenge to food manufacturers. Topics covered include: premises, equipment, staff, product recipes, raw ingredients, preparation, processing, packaging, shelf-life, labelling and food recalls. Key messages are highlighted at the end of each chapter.
